Shredded coconut

Bowl of shredded coconut

Dehydrated shredded coconut takes a little more work that just buying commercial shredded coconut. On the other hand, it's not sweetened, bleached or pasteurized!

Ingredients:

Directions: 

Remove liquid from the coconut before breaking it apart.  To do this, find a soft eye and push a screwdriver through to the center, then drain liquid
Tap the seam the runs between the eyes to break apart & remove outer shell
Use a potato peeler to peel off the inner husk
Use a grater to shred coconut pieces
To keep coconut from falling through trays, place on Plastic-Mesh Dehydrator Screens on the dehydrator trays. You may also want to put a Fruit Roll-Up Sheet on an empty tray at the bottom of all trays to catch any stray pieces.
Dehydrate at 115° for 2 - 4 hours until dry

Step 5 - Place on mesh inserts on Dehydrating Trays
Step 6 - Use an extra tray on the bottom with a fruit leather sheet
Step 7 - Spread shredded coconut evenly on tray
Step 8 - Use parchment paper to collect dried coconut
